Texas danced the two-step at the National ProStart Invitational (NPSI) this year.

That’s right; students from Dr. Gene Burton College & Career Academy in Rockwall, Texas, and Ben Barber Innovation Academy in Mansfield, took home the biggest culinary and management trophies for first-place honors.

The two first-place teams were best among 400 contestants competing at this year’s ProStart Invitational in Washington, D.C., hosted by the National Restaurant Association’s Educational Foundation.

The winning menu, created by the team from Dr. Gene Burton College & Career Academy, consisted of a sesame-crusted ahi tuna with mango, fennel, and wasabi salad appetizer; an entrée featuring oven-roasted beef tenderloin and pan-seared lobster with crab-stuffed mushrooms and assorted vegetables; plus glazed white chocolate-chai mousse, with ginger Swiss meringue, apple-cranberry compote, and ginger cookie crumble for dessert. The team from Ben Barber Innovation Academy created “Mezzo y Medio,” a Latin American/Italian fusion restaurant concept to win the management competition.

Here are the top five winners in the culinary and management competitions. They will share more than $200,000 in scholarships and prizes:

Culinary:

  1. Dr. Gene Burton College & Career Academy in Rockwall, Texas
  2. Herndon Career Center in Raytown, Mo.
  3. Anderson Career and Technology Center in Williamston, S.C.
  4. Passaic County Technical Institute in Wayne, N.J.
  5. Leto High School in Tampa, Fla.

Restaurant Management:

  1. Ben Barber Innovation Academy in Mansfield, Texas
  2. East Ridge High School in Clermont, Fla.
  3. Provo High School in Provo, Utah
  4. Wilson Central High School in Lebanon, Tenn.
  5. Kalamazoo Resa North West in Kalamazoo, Mich.

The competition is an offshoot of the NRAEF’s ProStart program, a national, two-year curriculum taught in high schools and technical education schools in 50 states, the District of Columbia, Guam and Department of Defense Education Activity Schools in Europe and the Pacific.
